If you or your date don’t like garlic please don’t make this dish. However if you do you’re both in for a garlic treat! It is simple which is typical for the Italian cuisine but when using high quality ingredience like olive oil and parmesan cheese this dish is just lovely which is the theme of the evening!
Ingredients:
- 1oz / 25gr dried chillies
- ½ cup / 125ml olive oil
- ½ oz / 15gr birdseye chilies
- ½ oz / 15gr red chillies
- 2 cloves garlic
- 1oz / 25gr parsley
- 1 cup / 250ml water
- 1 oz / 250g spaghetti
- ½ oz / 15gr parmesan (shaved)
Recipe:
- Soak the dried chillies in warm water for 10 minutes, then drain and cut into thin slices.
- Heat the olive oil and saute all the chillies and garlic until fragrant.
- Add half the chopped parsley.
- Add the water to prevent the garlic from over cooking.
- Cook the spaghetti in boiling salted water.
- Drain, then saute in prepared oil.
- Add the remaining parsley and season with salt and pepper.
- Transfer to a plate and sprinkle some shaved parmesan over the top.
