Pasta al Pesto

If a guy makes a home-made Pesto sauce for me he is already 90% there! It’s quite easy to make and I don’t know anyone who doesn’t love Pasta Pesto so it’s a safe and delicious dish! Good luck and bon appetite!

Ingredients:

  • 40 fresh basil leaves
  • 0.7 oz / 20g pine nuts
  • 0.5 cup / 100ml extra virgin olive oil
  • 0.7 oz / 20 g grated parmesan cheese
  • 0.7 oz / 20g grated pecorino cheese
  • A pinch of salt
  • 1 whole clove of garlic.
  • 7 oz / 200gr Pasta

 

Recipe:

Put everything except the cheese in the food processor and blend until smooth. (You might need to add more olive oil.) Add the cheese and blend again slighlty, making sure not to overblend.

100g (dry weight) pasta for each person. Make sure that you salt the cooking water abundantly and cook for the exact number of minutes indicated on the package! Place the drained pasta in a large bowl and thoroughly mix in the pesto sauce, adding some of the cooking water or olive oil if too dry. Serve topped with more parmesan cheese.
